Hey i created a lookup with a workflow to copy the value into a single line of text, however the Deliminator is ',' can this be customised ? to maybe add a space in after the ',' or even change this into '|' etc ?

In an SPD 2013 Workflow, the action is called "Replace Substring in String". I forget if 2010 WFs had it, or what the name was, but there might be something similar.
