We had PDF template forms that are fillable but it doesn't appear that SharePoint supports adobe fillable forms - is this a correct? If so, is there a suggestion on how to get around that?

It's very tricky to make this work , your option might be configuring from Adobe to publish form to SharePoint document library. Check on deployment or publish option first.
